Pumpkin cupcakes :D

These tasted amazing even though they were super rushed.
The icing was my own recipe.

  • 1/2butter

  • 4 cups sifted confectioners' sugar

  • 4-5 tbsp of milk

  • 1 tbsp of vanilla

  • optional- 1-2 tsp cinnamon

Soften the butter and blend it with the confectioners' sugar. Add milk and vanilla. Blend until smooth with no clumps.
Ices 24 cupcakes.

For the actual cupcakes I used this site:
Yummy they were my best cupcakes yet. :D

Pineapple cupcakes

O.K. today me and my dad made more cupcakes, yummy!!! Guess what flavor they were???? They. Were. Pineapple!!! We had a pineapple laying around and we needed to bring dessert to a dinner. OK, you have no idea how hard it was to find a pineapple cupcake on the internet that wasn't up-side-down :P !! Soooooo what I did was found a good chocolate cupcake recipe and added pineapple to it instead of walnuts, check it out.
http://www.food.com/recipe/easy-one-bowl-milk-chocolate-fudge-cupcakes-116989 (makes 12 cupcakes)
(oh and by the way the pine apple was chopped up really small and cooked in a pan with sugar and vanilla to caramelize it)
For the frosting I found that separately on a different site.
http://southernfood.about.com/od/pineapplecakerecipes/r/bl51023f.htm (frosts 24 cupcakes)
(you should cook enough pineapple to use in both recipes.)
Omigosh as well my dad was cooking something else and he was cooking on broil and then left it there when my mom put the cupcakes in and halfway through the cooking we noticed but the tops of the cupcakes were already burnt, in the end they turned out ok ;) but make sure that your stove is not on broil, lol.

Cherry snowballs!!!!

Hey, my Oma (grandmother)  gave me a ton of recipes from a Croatian  cookbook she had and i'm going to post a few of them and try a couple. One that caught my interest as I look through them was the one called "Cherry Snow Balls", sounds yummy! Here try it for yourself :)

1 cup butter
1/4 cup icing sugar
2 cups all-purpose flour
1 cup almonds, chopped (although it didn't say "optional" I think it could be)
1/2 tsp. salt
1 tsp. vanilla
1/2 lb. candied cherries (red and green mix) (and yes i had to look up if there were any other colors, i think there might be yellow ;)

Cream the butter with the sugar until fluffy. Add remaining ingredients except cherries, mixing well with your hands. Flatten a small amount of dough in the palm of your hand. Place one cherry in center of dough and cover by pinching dough up and around it. Roll until smooth. Place on greased cookie sheet. Bake at 325 degrees F
for 30-35 minutes (slightly brown on bottom). While still warm, roll in granulated sugar.
Makes 3 dozen.

Yummy yum yum, have fun! (I wonder if these would be good on ice cream) ;)
